Ghosty Cupcakes


Once again I allowed my friend to talk me into doing something horridly girly with them [Check out their blog here!] and I tried once again to make something from 'A ZOMBIE ATE MY CUPCAKE' as many can remember from the post here where we tried to make 'BROKEN GLASS' effect cupcakes I really don't bake well.

So using the same book we took a crack at making the cute ghost ones.



We made basic cupcake bases as followed


-250g Plain flour, sifted
-Pinch of salt
-2 Tsp baking powder
-190g Caster sugar
-115g Unsalted butter, cubed
-2 Large eggs
-120ml Whole milk
-2 Tsp Vanilla extract
-Icing sugar
-Red food dye
- Marshmallows





The idea behind it was to make cupcakes and a marang that would sit on top of the giant marshmallows we bought and they would form 'peeks' to look like our ghosts.

The cupcakes were just a normal cupcake concoction.






1. Preheat the oven to 180ÂșC/gas mark. Put the flour, salt, and baking powder into a medium bowl, then add the sugar. Add the cubes of softened butter, dotting them evenly into the flour mixture. Blend with an electric mixer, starting on slow speed and working up to medium until evenly incorporated. Add the eggs one at a time, beating to combine.




2. Combine the milk and vanilla extract in a separate jug, and then add to the batter in three parts, beating well after each addition. Spoon the batter into the paper cases, filling them three-quarters full.




3. Bake for 15 minutes, or until a knife inserted into the centre comes out clean. Cool in the muffin pan for a few minutes, then transfer to a wire rack to cool completely before decorating.





Then we made the meringue which was made from the following..

For the meringue frosting

4 large egg whites
200g granulated sugar
¼ tsp cream of tartar
Pinch of salt

Now.. we had all of that but no electric whisk.. and I realllly do suggest you use one,. between her small latte coffee whisk and my pure awesome man strength... it never thickened... we even adding icing sugar and everything.. wasn't having it.

Normally one would put a large marshmallow on your cupcake for the base..

So we decided to give up on are utter failure and make the vampire bite ones instead using food dye and pomegranate seeds.
